Pineapple Upside Down Cake

40 mins       Serves 6-8        Non Vegetarian 


1 cup flour
1 cup sugar
¼ cup butter
2 tsp vanilla essence
3 eggs
10-15 pineapple slices
¼ cup sugar for caramel
1 tsp baking powder
mint leaves, for garnish
chopped pineapple, for garnish


1. Make a smooth batter of flour, eggs, sugar, butter, baking powder and vanilla essence.

2. Heat the skillet on a medium flame. Add sugar and let it melt till it becomes caramel. Add the pineapple slices, layer them thinly across the pan.

3. Pour the batter on the caramelized pineapples, reduce the flame and then close the lid and the Redi-Temp™ valve and let it cook for about 40 minutes. After 40 minutes take it off the flame and let it cool down.

4. Flip the cake carefully in a plate and garnish it with some chopped pineapple and mint leaves.

5. Serve warm or chilled.
